Prepare the following vegetables okra:


2 medium bell peppers (red, yellow or green, or a mixture), cored, seeded and chopped 1/2 inch
1 large onion, coarsely chopped
2 stalks celery, chopped 1/2 inch
2 garlic cloves, finely chopped
In a large saucepan or pot, heat 2 tablespoons vegetable oil until light soup soup. Add peppers, onions, celery, garlic and cayenne pepper. Season Season the vegetables with salt and pepper and cook over medium heat until soft, about 5 minutes.
