Merguez and Kale Soup Recipe

Preparation
In a large pot, cook the sausage over medium heat until browned. Remove from pan and pour off the fat. Add olive oil and onion and fry until they are soft. Add the chorizo, potatoes, broth and water. Bring to a boil and cook until the potatoes begin to fall apart. Add cabbage and stir until everything melts into the soup. Simmer 10 minutes, until the cabbage is cooked. Season with salt and pepper.

If desired, mash some of the potatoes to thicken the soup, or serve as IS. Serve warm with a dollop of sour cream and stir peppers.
