This recipe for corn sauce is really a color change from regular salsas. Fresh Corn Salsa is a wonderful texture and softness. Corn Salsa can be used with any recipe that are regularly salsa style called chunky.
About 6 cups before corn sauce

Ingredients:
- 2 cups diced ripe tomatoes
- 2 cups sweet corn kernels
- 12 oz tin black beans, rinsed and drained
- 4 spring onions, thinly sliced
- 1 to 2 green jalapeno, seeded and finely chopped
- 1/2 bunch fresh coriander, roughly chopped
- 1/2 lemon
- 1 fresh lime juiced
- 3 tablespoons olive oil
- 1/4 teaspoon dried oregano coffee
- 1/2 teaspoon sugar
- Salt and freshly ground black pepper to taste
Preparation:
Combine all ingredients in a large glass or stainless steel bowl to combine. Cover and refrigerate at least 1 hour before serving. You can make a maximum of 8 hours in advance. Mix well and serve.
