Fresh Corn Salsa Recipe

This recipe for corn sauce is really a color change from regular salsas. Fresh Corn Salsa is a wonderful texture and softness. Corn Salsa can be used with any recipe that are regularly salsa style called chunky.

About 6 cups before corn sauce

Preparation time: 20 minutes

Total time: 20 minutes

Ingredients:

  • 2 cups diced ripe tomatoes
  • 2 cups sweet corn kernels
  • 12 oz tin black beans, rinsed and drained
  • 4 spring onions, thinly sliced
  • 1 to 2 green jalapeno, seeded and finely chopped
  • 1/2 bunch fresh coriander, roughly chopped
  • 1/2 lemon
  • 1 fresh lime juiced
  • 3 tablespoons olive oil
  • 1/4 teaspoon dried oregano coffee
  • 1/2 teaspoon sugar
  • Salt and freshly ground black pepper to taste

Preparation:

Combine all ingredients in a large glass or stainless steel bowl to combine. Cover and refrigerate at least 1 hour before serving. You can make a maximum of 8 hours in advance. Mix well and serve.
