This recipe for fresh corn salsa really makes color change from regular salsas. Fresh Corn Salsa is a wonderful texture and sweetness. Corn Salsa can be used with any recipe that calls for regular chunky style salsa.
Corn Salsa Makes about 6 cups fresh
Preparation time: 20 minutes
Total time: 20 minutes
Ingredients:
- 2 cups diced ripe tomatoes
- 2 cups fresh corn kernels
- 12 oz-can black beans, rinsed and drained
- 4 spring onions, thinly sliced
- 1-2 green jalapeno, seeded and finely chopped
- Half bunch fresh coriander, chopped
- Juice of half a lemon
- 1 lemon, juice
- 3 tablespoons olive oil
- A quarter teaspoon dried oregano coffee
- Half a teaspoon of sugar
- Salt and freshly ground black pepper to taste
Preparation:
Combine all ingredients in a large glass bowl or stainless steel to match. Cover and refrigerate at least 1 hour before serving. Can be made up to 8 hours in advance. Mix well before serving.
