Ingredients:
- Half cup shelled pumpkin seeds roasted,
- 2 tablespoons grated Parmesan
- 2 cloves of garlic
- 4.3 cup basil
- 4.3 cup fresh parsley
- 2 tablespoons fresh lemon juice
- Half a cup of olive oil
- Salt to taste
Preparation:
- Combine pumpkin seeds, parmesan cheese and garlic in a food processor. Pulse on and off for about 20 seconds until the seeds are almost floor. Add basil, parsley, lemon juice, olive oil, and pulse on and off for about 40 seconds until all ingredients (you can remove the sides with a spatula between pulses). The mixture should be more like a paste in a liquid sauce, so be careful not to over process.
